From the estate vineyards spread across the elevations and exposures of the Spring Mountain District, to the historically-significant and pop-culture famous winery, then travelling to our icy-cool warehouse, and finally off to you lucky souls that read fast, jump faster, and absolutely FLY to your cart! Just ludicrous. If “Elivette” sounds like a little pixie queen of ultimate French beauty – you’re not far off. First crafted in 2000, this flagship wine was born from pristine lots of Cabernet Sauvignon, and carefully blended with the best-of-the-rest Bordeaux grapes – Cabernet Franc, Merlot, Petit Verdot, and Malbec. This 2005 settles out at 81% Cabernet Sauvignon, 7% Petit Verdot, 7% Cabernet Franc, and 5% Merlot from estate vines that start at the very base of Spring Mountain, and rise up to elevations nearing the mountains’ peak of nearly 2,600 feet. We’re talking over 800 acres of sloping vines with ties to the pioneering days of 1800s Napa Valley – and a winery whose history crosses paths with some of the great icons of Napa Valley…names like Beringer, Nickel, Lemme, Crane, and more!
2005 was considered a cool, almost Bordeaux-esque vintage for Napa Valley – ideal for aging, yet never giving up that classic Napa Valley hillside Cabernet Sauvignon power and character. This has all that and then some – with the sort of time-honed patina that only two decades of careful (and minimal) handling can bring about! Dusty berries and cherries, with soft and supple oak notes, expressive cocoa bean and nutty almond decadence, with a beguiling array of fig leaf, and tobacco, with toffee, and fresh-turned earth. Iron-born backbone keeps this long and strong through an incredible roller-coaster ride of a finish – and the sort of lingering satisfaction that only 20 years young, Spring Mountain-grown Cabernet Sauvignon can offer.
