The savviest of y’all might remember the KILLER offers of Seabold Cellars we’ve featured these past couple years – utterly jaw-dropping and earth-shattering deals on Pinot and Chardonnay from Cali’s Central Coast that outperformed, outpaced, and outshone wine three or four times the price? Well, this is that…but CABERNET! Wine guru, Master Sommelier, Wine Spectator Grand Award winner, and all-in-all PHENOM, Chris Miller has become the wunderkind of exceptional value, terroir-expressive, food-friendly, budget-balancing wines here across California. BOLD is his newest label, and this remarkable CABERNET SAUVIGNON from Paso Robles is a biblical, end-times-worthy REVELATION. Normally $30 (and a stunning deal at that price) at the winery, we somehow – through dark magic, sheer luck, and incredibly fortuitous timing – scored this at a price I can scarcely imagine!
TWELVE DOLLARS!!! No, it’s not a half bottle, or one of those extra-mini-bottles they pawn off on discount airlines, this is a full-size, utterly captivating bottle of BOLD (obviously) and beautiful Paso Cab! Jeb called it “aromatically compelling,” and yeah, that checks out. Black trumpet mushrooms, and heady clove, with polished leather, and roasted herbs, all punctuating this bright and boisterous core of black currants, and red cherries, with tart and complex wild plum accents. It’s Joe Camel cool and medium-weighted – thanks to the cool-climate, ocean-influenced sites of Adelaida Creek and the San Miguel Districts of Paso Robles – but an absolute CHAMP when it comes to food pairing. Balanced and structured to develop another 7-10 years, E-Z – so get more than you think you’ll need…and reap the rewards for years to come!
